Should I assume that once it’s WIFI connected to begin with, I go in and remove the dhcp package, set the network/interface and then it should work?

Or, you can say no to screenly managing your network so it doesnt turn on network manager, and you can set up your network manually since now you know exactly what to do.
Dont forget to set up all localisation options, because keyboard, wifi country, locale, en_US UTF 8, all these little things we changed are what makes the whole thing work properly.
